We proudly brew 16 different types of Junmai Daiginjo sake with several varieties of locally grown rice. This includes our signature sake, TATENOKAWA 18, the ultimate Junmai Daiginjo sake, delicately polished up to 18 percent.
In addition, we produce seasonal draft sakes and unfiltered sake.

Characteristics of the Sake
- Brewing only Junmai Daiginjo sake from sake rice polished to 50% or less in weight
- Annual production of 80,000(1800 ml) bottles *Oct. 2011 – Sep. 2012
- Particular attention paid to the choice of materials, of which 80% are produced by local contract farmers (DEWASANSAN and MIYAMANISHIKI sake rice)
- All rice polished on the premises, filtration without using activated carbon, and all sake stored in glass bottles
- Uses water found beneath Mt. Chokai for brewing
- Handmade sake brewing, adhering to the basic traditions, by young brewery workers with an average age of 33
