
Established in 1832, Tatenokawa, Inc. boasts a 170-year history based in the Shonai region of Yamagata, bordered by Mt. Chokai to the north and Mt. Gassan to the south. Especially notable is the region’s water, rice, and fruit used inTatenokawa’sproduction of sake, plum wine, and other liqueurs.
The Water
The pure mountainmeltwater utilized in production is filtered naturally over a period of several decades through the bedrocks of the mountains.
The Rice
Grown for the sole purpose of creating sake, the rice from which the sake is brewed is grown inpartnership with local agricultural professionals. Tatenokawa’s sake draws its unique character from DewaSansan and MiyamaNishiki, two types of sake rice original to Yamagata Prefecture.
The Fruit
Yamagata Prefecture is known throughout Japan as the Fruit Kingdom. Between Summer and Fall, the temperature varies greatly between night and day, allowing for the cultivation of a vast array of luxuriously sweet and nutrient rich fruit.
